Ingredients:
  • 2 ripe peaches, sliced
  • ½ cup smoked goat cheese (or plain chèvre)
  • 1 ear corn, husked
  • 2 quarts fresh baby spinach
  • 4 slices thick-cut bacon
Honey Balsamic Vinaigrette:
    • 3 Tbsp minced garlic

    • 2 Tbsp Dijon mustard

    • ¾ cup honey

    • 1½ cups balsamic vinegar

    • 3½ cups extra virgin olive oil

    • 1 tsp kosher salt

    • 1 Tbsp Italian seasoning

Instructions:
  1. Grill Fruit & Corn
    Preheat grill to medium-low. Grill peach slices and corn directly on grates for about 5 minutes, turning once. Let cool slightly, then slice corn off cob.
  2. Cook Bacon
    Dice bacon and fry until crispy. Drain on paper towels.
  3. Make Dressing
    Whisk together all vinaigrette ingredients in a bowl or shake in a jar until combined. Store leftovers in the fridge.
  4. Assemble Salad
    Toss spinach with a few spoonfuls of dressing. Gently mix in grilled peaches, goat cheese, corn, and crispy bacon.
